The stuffed eggplants are a versatile recipe, which can be prepared with a lot of ingredients, depending on the preferences and tastes of each person. Here is a tasty and satiny recipe for meat-filled eggplant, perfect for lunch or dinner!

4 eggplant

300 g minced chicken, pork or beef

1 onion

1 pepper

2-3 garlic cloves

50 g broth

1/2 parsley connection

150 g tomatoes

50 ml of olive oil

100 g cheese

Method of preparation

Cut the eggplant in half (lengthwise) and remove the core with a teaspoon. Season them with salt and leave them 30 minutes apart. Meanwhile, prepare the filling: heat the peppers, onions and garlic in an oil pan, then add the meat and eggplant core. Mix everything well and leave the composition a few minutes on fire.

When the meat is whitening, add the chopped broth and parsley. Turn off the heat and season with salt and pepper. Drain the eggplants that they have left and fry for a few minutes in an oil pan. Fill them with the meat composition, place them in a tray lined with baking paper, sprinkle cheese over each and place them in the oven for 30 minutes.
